This Italian fish sauce is made by fermenting pickled anchovies and has a complex "umami-rich" flavor. Traditionally use it to make "Spaghetti alla Colatura di Alici" - tossing cooked spaghetti with a small amount of fish sauce, garlic and olive oil or as a topping for fish-based soups.
